This is a great question, and one we're asked frequently.  Simply put, think about a paper towel.  Picture one soaking wet, and another one dry out of the package.  Which one do you think will be easier to ignite?  Which is likely to burn longer and cooperatively?  So, think of fresh cut wood as a wet paper towel.  Cured or seasoned wood has been essentially dried post cut for several months.  It's essentially a dry paper towel and ready to burn slowly, and without any troubles.
